Korean Cooking Class

Annyeong-haseyo...

A few years ago, I attended a Thai Cooking Class at Silom Thai Cooking School in Bangkok and Authentic Vietnamese Cooking Class in Hanoi and this year I don't have to 'fly' to learn to cook another foreign meal. Korean Cooking Class is just right here in Malaysia! A galaxy size of thank you to KTO (Korean Tourism Organisation). As usual took loads of pix at the venue: Korea Plaza KL but, so little time to filter and upload 'em here. These few days have been busy in and out Service Centre for "Mr.GenDoe-My Malaysian Car" affairs *sigh*

So sleepy & tired but before I hit the bed, just wanna share the video during our class on how to make Mandu ( Korean Dumpling) & Tteokguk (Rice Cake Soup) with Madam Shin, the Korean Chef...her English is so adorable ;-))) Also for future reference incase I misplaced the recipe.

Alrighty, Gotta go...gotta go TaTa! Oh wait! Packing Time...can feel the sea breeze alreadeyh!!! Lallalala tak jadi ngantuk mwuahaha

Cilantro Culinary Academy - School of Culinary Arts

Cooking Academy....Culinary Arts...??!  Taking the interest of cooking & baking one step further and become the 'MasterChef at Home'. Oh wow! That sounds rather too ambitious of me...I think I better stick with what I do best, "Work from Home" and "Cooking for leisure" ;-)

Received an invite from a publisher of  Food & Travel Magazine (Singapore) to participate in their Festive Cooking Demo/Class with Chef Bernard Lee at Cilantro Culinary Academy, *click for info* located at USJ Sentral, Subang Jaya nearby Mydin Mall & Summit.

The Class was scheduled to start at 11:00am and finish by 2:30pm but as usual waiting for some late comers to arrive some got lost, not familiar with USJ area and stuck in a 'Saturday busy traffic' bla..bla..bla.

Finally at noon, all 30 of us (I think..or maybe less)  were ready with our printed recipes & pen as well as  the jovial Chef Bernard, he's so ready to roll up his sleeves and begin the demo class....

aha...the youngest & cutest particpant who luvs Pop Cakes so very much! 
 she just sat in the baby highchair next to her mom during the whole 2-hour session without any complaints 
Good Girl...So behave!


Among the three featured recipes, Pop Cakes /Cake Pops of cozlah my luv of all...suweeetttttt gorgeous taste! After this no more Starbucks Cake Pops & can eat more than one YeaY!! ;-) 

Chocolate Ganache 
500 gm - Dark Chocolate Coverture
450 gm - Cream (boiled)
50gm    -  Butter

Method:  
-Cut the chocolate coverture into small pieces
-Boil up the cream onces its boiled pour it into the chocolate eith the butter
-Constantly stir until the chocolate dissolved and set it at a cool place

Pop Cakes 
500gm   - Sponge Cake (any sponge cake will do)
As need - Chocolate ganache
(put in the freezer for some time)

* Chocolate ganache ratio depends on the moisture and the type of sponge cake.  You may decorate it as you wish by using colour balls, chocolate or candy fruits.

Pop Cakes..Cake Pops...??



Yeay! Yeay! Tak payah la beli Starbucks Cake Pops setiap kali teringin nak makan ni boleh makan ber-Pop2 huhuhu ;-)

Nanti kita share main masak-masak ni ye. Terpenat sangat balik dari grocery shopping kat Subang Jaya tadi dengan meredah jem hujan lebat lagi...adihhh ngantuk.

Besok pepagi dah ada appointment mencantikkan rambut yang dah lemau ni...nak potong pendek sayang hmmmm...hair dilemma again!

BBQ - Raya Qurban - Kayell

Selamat Hari Raya Haji...Selamat Hari Raya Qurban...
Salam Aidil Adha kepada semua umat islam
10 Zulhijjah 1432

Raya tahun ni kami raya kat Kayell je tak balik Aloq Staq pun...so plan buat BBQ kat rumah dengan kawan rapat Mr.Hubs & kami adik beradik kebetulan my eldest bro mai Kayell.

Walaupun sederhana tapi meriah ngan suara Evita, gelak ketawa kakak Damia & Lola melayan kerenah dia.  Hari ni nak pi ziarah makam mama kat Bukit Kiara je maybe tonite BBQ lagi ngan Papa pulak marinated chicken, prawn, burger & hotdog still ada lagi dalam freezer.   Lamb & Salmon kegemaran ramai kecuali saya & Lola semua "HABIS" semalam !!

Tips kepada sesapa yang nak beli BBQ marinated chicken, lamb etc Giant Kota Damansara tempat yang paling banyak pilihan berbanding Giant2 kat tempat lain dan jugak Tesco. Sebab tu kami kalau nak ber-BBQ awal pagi dah pi Giant KD (opening hours:  8am-12midnight) semua ada tak payah singgah memana lagi.  Kadang-kadang beli kat TESCO tak brapa fresh and barang selalu out of stock bukan sekali kena banyak kali dah..huuuhhh!

Tahun ni Qurban kat sini macam meriah dua-dua Surau buat Qurban Alhamdulillah! Tapi tengok diorang turunkan lembu-lembu tu dari lori dua tiga hari lepas alahai shiannya belum tengok time dia sembelih-sembelih lagi...:-(

Homemade Scones....

I tweeted about "Scones+Strawberry Jam for Tea Treat......."  this afternoon.  Hmm..then  I thought why not making some of my own, I mean homemade scones.  How bout the Recipe...? How to make a perfect scones? Btw, it pronounced as "Skon" in Scotland & Northern England or "Skoan" in the South but I just call it "Skoan" sounds a lil bit sweet;-)) Google search for the recipe & I found this from the British & Irish Food recipes website...

Ingredients:

* 2 cups /225g self raising flour (since I don't have it in stock, I just used plain flour)
* 1/2 stick/55g cold butter
* 1 level tsp baking powder  (increase it to 2 tsp for plain flour)
* 1/2 tsp salt  
* 1/4 pint / 150 ml milk  (full cream or low fat - your preference)
* 1 egg beaten with milk
* I also add 1/2 cup of caster sugar & sultanas/raisins

I prefer to watch a 'hands-on video' on how to do it.. so my 2nd reference, of coz YouTube:

I followed her method but I reduced the size coz I like cute scones;-))))

The results of MY first attempt at making scones......ooops actually OUR (with the help of my sis, Lola):-


straight into the oven....@160'C for 20-25mins (baking time may vary)

ready for tea ...;-)

serve with butter, jam or cream...NICE!!!

Rainbow Marble Cake....

'Baking fever...in Da House!!' Yezz..for the First time without the wonders of Pillsbury & White Wings Cake Mix. Macam biasalah dari mana lagi kalau tak google search for the recipes then You Tube for the steps, "Tibalah Masa Untuk Mencubanya ...."

1st 'experiment' - 4-colour rainbow cake (last week)...

The tedious part I leave it to my sista, I don't  think I have the patience for the "details" especially the swirling part...hihihi  *ohh..sorry pix xnampak muka atas permintaan Ms.Lolla ni dia kata rambut muka dia macam xsudah...whateva ^-^*

2nd 'experiment' - also in the same week (last Friday)
with the same recipe but this time just two colours Chocolate & Butter (yellow) or its famously known as 'Marble Cake'...


Again, she did the swirling.  Nice...Very Nice! Ada la sedikit kekreatifan di jiwa Ms. Lolla ni.  Ha!..me?Out...tak berani nak cuba.   
**Do Not Over Swirl the batter if you wan't the marbling effect.**

Plan seterusnya dunno when yet depends on my 'baking mood',  I'm gonna use the same recipe to bake Orange Cake by replacing the cocoa powder & colours with orange zest & juice;-)  Errmmm...boleh ke sesedap Orange Cake @Delicious Cafe Bangsar, KL???!  Belum cuba belum tau kan...at least ala2 pun dah okay coz I really luv Orange Cake..Yum!Yum!

Posh Bread N' Butter Pudding...

How do you like your Tea? Sugar, Milk, Honey? I like it light with Sugar or Honey & a Slice of Lemon.
How about  Bread N' Butter Pudding...? Serve with with home-made yogurt, ice cream, custard or cream? That! would be just perfect with Vanilla Ice Cream & a cup of  Twinnings Earl Grey Tea.

So, I decided to make my own homemade B&B pudding for TEA instead of indulging myself with some sweet 'wicked' dessert at Alexis Bistro, Bangsar *Alexis B&B pudding is simply Gorgeous*.   With the help from  'Google'... of coz.  Here's The Traditional British Bread N' Butter Pudding Easy Recipe that gives you THIS as a result:-)

    I'm lovin' it 

    Ingredients:

    Serves: 4 persons
    • 8 slices of brown or white bread (traditionally white bread is used)
    • 3 cups of milk
    • 3 beaten eggs
    • 113g / 4 oz brown sugar *if you use caster sugar reduce it*
    • 85g / 3oz sultanas *I used Ligo raisins*
    • 1 tsp vanilla essence
    • 1/2 tsp cinnamon *I omit this coz I prefer the 'non-cinnamon' taste*
    • 1/2 tsp salt
    • Butter (enough to butter the bread and to grease the baking dish)
    Method
    1. Pre-heat the oven to 170C / 325F
    2. Grease a 5cm / 2inches deep oven proof baking dish.
    3. Thinly butter each of the slices of bread on both sides, covering the whole slice right to the corners and cut into 4 triangles.
    4. Place a layer the buttered bread on the bottom of the dish, slightly overlapping each triangle.
    5. Sprinkle with sultanas and sugar and make another layer. Continue in this way until the bread is finished. Sprinkle fewer sultanas on the top, but do give a generous sprinkling of sugar.
    6. Beat together the milk, eggs, cinnamon, vanilla and salt and pour the mixture over bread.
    7. Allow to stand for 30 minutes so that the bread can absorb the liquid.
    8. Place in the oven and bake for 30 to 40 minutes. * 40-45 mins for my oven*
    9. The top should be golden brown.  If you reduced the baking time, the bread and butter pudding stays a little moist, which some people prefer.
    Its quite a detailed method given there but "Visual Cooking" is definitely a plus...Yes! Learn To Cook with "You Tube" that can teach you to cook anything. "Now Everyone Can Cook"... huh;-)

    Before you watch the video, please note that I still follow the above Recipe,  in other words this POSH NOSH BBC TV Series just for me to see the 'step by step preparation'...it helps!



    Don't curse me if you hate them both "Simon & Minty" hahaha. A long -winded explanation on the history of  this n that but its quite funny though.  I always luv the Brits accent. The way Minty says "fluff  (the eggs) diplomatically..!^;^  Oh one more thing...No Cognac (brandy) used in my Bread N' Butter Pudding ahaks;-)

    You might wanna have B&B pudding for Brekkie or Tea this weekend. Just give it a shot;-)

    ButterCake...

    Cake!!! My favourite topic of all. Chocolate Cake, Fruit Cake, Orange Cake, Cheese Cake, Butter Cake so many choices @ Secret Recipe, Zen, Just Heavenly a lot more but when it comes to baking, its a bit of a 'challenge for me..haha.  Always simplify things according to your capabilities;-) Here's my super fast homemade baking moment with White Wings Cake Mix, an Australian Brand since 1898 fuhh! can be considered as heritage...

     it only took me 8 minutes for the prep (just add eggs, butter & milk)

    & 30 minutes later...

    Ta Da!....ready to serve

    Bake A Cake...

    Baking stuff:  Oven - checked! Mixer - checked! Baking Pan - checked! Cake Mix - checked! All set for my very first cake baking moment, there's a first time for everything! Oops a lil bit shy actually but what the heck better start late than never;-)

    As a beginner, I think its quick, fun, easier & much safer to use the "Pillsbury Cake Mix"...a higher percentage of having a 'successful' result.

    2 minutes after...
     heat the oven  to 180'C and bake for 40mins...
     Fuhhh..."It rise and fine..!"

    for a start: just a simple plain 'Pillsbury' chocolate cake for dessert tonite...
    no cooking chocolate, so no topping...

    With these two new "Combo", I can start drillin' on my baking skills...practice makes perfect!

    Bread Talk...

    Yezz...today!! Sunday, 27th June 2010 its the breadmaking hands-on workshop @ The Cooking House. The class has been re-timed from 2:30pm to 12:30pm, better still "starts early finish early". There're 4 types of bread: Hokaido Milk Loaf, Prune & Walnut, German Muesli Bread & Tortillas in the making.  Okay not gonna be draggy on the intro, let the photos speak for themselves eermm..with captions of coz.

    My final review- it was fun, interesting, adding new frenz on FB and overall I'm very satisfied with the class.  Will definitely register for their next baking class in July still waiting for the new classes calendar to be out.
